Fun Weekend And My Next Adventure

One note: today begins my adventure into eating more to lose weight. Wish me luck! I also got back to the gym this morning and will get into my regular schedule again.

To prep for the week, I tried a recipe for Egg Muffins. I figured I would just make a bunch over the weekend and then pop one in the microwave each morning for added calories and protein. I followed the recipe to the letter, except for the sausage and they are about 130 calories per muffin and almost 13 g of protein! I used the fully cooked turkey sausage crumbles (Jimmy Dean maybe?). They came out really well and were SO easy to make. And it makes almost two weeks worth!

 

 

We also tried our first recipe out of the Runner’s World Cookbook I bought recently. It was the meat and grain burgers. We used ground turkey instead of beef, but otherwise followed the recipe. It was more like meatloaf and VERY crumbly. We didn’t bother with putting it on a bun once it was cooked – it wouldn’t have stayed that way anyway! They were HUGE! The recipe says it makes 6, but we could probably make them smaller next time and turn it into 8 servings if we wanted.

 

 

Let’s not leave out some fun. Saturday we hung out with some of my friends from work and we took them to their first froyo experience at Orange Leaf! They loved it, and who couldn’t??

 

And let’s not forget E.T. Tara is horrified by E.T. and didn’t like the movie growing up. When we were grocery shopping Friday night, we always pass by this toy grab machine on the way out. Well, it was like he was BEGGING her to love him. Please…LOVE ME! HAHAHA

 

 

Busy week ahead. I was supposed to have jury duty today and tomorrow, but today was cancelled due to the “snowstorm” – we got about a 1 inch dusting overnight and now the sun is out. What a waste. I still have to go tomorrow though. I have a road runner meeting tomorrow night, chiro appt on Wednesday, taxes on Thursday night and the dentist on Saturday! Phew! Got a race on Sunday, too…can’t wait! I’ll try to keep up with reading everybody’s blogs, but there may be a bit of radio silence from me. Hope everyone has an awesome week!

    Have a great week! We’re supposed to get more snow on Thursday. Will it ever end??

      I am SO all set with the snow!!! If it’s gonna snow, I hope it’s enough that work gets cancelled on Friday. Then, I’m OK with it.

      PS. If you make the muffins, FYI that 20 min in my oven wasn’t enough, 25 may have been bordering on too long (but I ended up leaving them in probably 26-27). I hope you like them as much as I have!

    I’ve done those egg muffins before – but in wonton cups – each wonton only adds 15 calories, and I like the added crunch. I may have to make those next week. πŸ˜€ Have a great week!

    wow, the egg muffins look awesome! now on my menu for the week.

    And good luck on the eating more project! Give it time, no judgements, and the worst that happens is you have to readjust your caloric intake.

      Awesome – let me know what you think! I love having something so simple to grab for some added calories and protein!

      And thanks – harder to eat that many more calories than I thought! Suppose I’ll get used to that pretty fast though. I liked not feeling ravenous throughout the day!

        Oh my gosh I love not being ravenous all the time. It’s so much easier to moderate what I’m eating. I agree it can be a challenge to eat enough to hit your calorie target–I keep chocolate bars around and if I need extra calories at the end of the day I’ll eat as many squares as I need to hit that target.

  9. Wow, busy busy week is right! Ok totally gonna have to try those Egg muffins! I could use some variation rather than my usual oatmeal or red berries cereal! Hope you have a great week and it’s less stressful than it sounds!

    The egg muffins are kind of like omelettes and so my boys call them Mom-lettes because I made them πŸ™‚
    I have that cookbook too!!! I’m so sad that I haven’t tried anything out of it yet (my mom gave it to me). How did the dinner TASTE?

      Mom-lettes is cute!

      The burger was good! I wasn’t sure the first time we ate them, but the last two nights when we’ve had the leftover ones I’ve really enjoyed them. It’s funny how sometimes stuff just tastes better the next day.

  12. I love egg muffins. So simple. I usually use the liquid egg whites so peppers, onions, and turkey sausage/bacon. So yummy.

  13. Ooh those recipes looks awesome. I will very much have to try the egg thing since I’m terrible about breakfast and the easier it is the better. I’ve been keeping oatmeal and unsweetened applesauce at my office. It’s been working well, but I need variety.
